First Fourth

Earlier this month we celebrated Varun’s first Fourth of July holiday – the American Independence day.

So far we have celebrated all major Indian and American holdiays complete with special meals – modak for Ganpati, turkey with all trimmings for Thanksgiving, til- gul for Sankranti, puran poli for Holi, shrikhand for Gudipadwa etc.

While 4th of July BBQ was on cards, Varun was down with an ear infection for the week leading to fourth. His temperature was around 103- 104 for three days before it gradually subsided that Sunday. We were all exhausted and needed a quick pick me up – which in this house means a simple everyday cake!

I found this real easy recipe which I adpated to red-blue-white colors with strawberries and blueberries that I had on hand with a generous dollop of fresh cream.

The cake was prepped and baked while Varun took his nap. Varun enjoyed the baked berries while we were more than happy to polish off the cake.
